Alice et Olivier De Moor 'L'Humeur du Temps' Chablis, 2023 rum cocktail and earthly elements for a100% Chardonnay. The goal of this cuve is to capture a snapshot of the vintage rather than the nuances of a single vineyard or plot, hence the name, which translates to "The Mood of the Times" (or Weather). Pair this with lobster bisque and your favorite grilled cheese.
